West Virginia Arctic Char
INGREDIENTS

2 - 2.5 pounds fresh Arctic Char 2 Carrots
1 head Celery
1 Yellow Onion
1 head fresh Fennel
3 cloves of Garlic
2 quart Fish Stock
2 large Baking Potatoes
2 large Golden Beets
1 cup Butter, unsalted
1 cup Vegetable Oil
1 cup All-Purpose Flour
Salt & Pepper to taste
2 cups Wild Rice
1 quart Chicken Stock
2 cups West Virginia Pure Maple Syrup
1/2 cup Brown Sugar
Micro Lentil Shoots
Micro Fava Bean Shoots


PREPARATION

Filet the fish and remove all bones; you should have 4 - 8 ounce portions. Cut each 8 ounce portion in half. Pat portions dry with a paper towel. Lay all portions on parchment paper for seasoning. Season both sides with salt and pepper. Dust lightly with flour. Heat a sauté pan and drizzle in oil. Pan-sear all portions slightly. Remove and place on a sheet pan and let them rest.

Celery, carrots, fennel, beets, and onion should be cleaned and diced into 1/4 inch pieces. Sauté all vegetables lightly in butter and season to taste with salt and pepper. Add 1/2 teaspoon chopped garlic. Add 2 cups fish stock and let it come to a boil. Let cook 15 minutes.

Cook rice in chicken stock.

In a non-reactive sauté pan, mix maple syrup with the brown sugar. Let it melt slowly until smooth. Add 1 teaspoon butter and stir slowly. Keep mixture warm.

Peel potatoes, dice into 1/4 inch pieces, and cook in boiling water until fork tender.

Heat the remaining fish stock in a sauce pan and simmer over heat until needed.

Place the sheet pan with fish portions in a 350°F oven for 5 minutes.

Presentation: Lay out four large pasta dishes. In each dish place vegetables and potatoes to cover the bottom of the dish. Sprinkle 1/2 cup of rice over each dish. Pour fish stock over the vegetables and rice. Place one piece of fish on top of the vegetables. Place micro fava bean shoots on top of each fish portion. Top with second portion of fish. Lightly drizzle with the maple syrup mixture. Garnish with micro lentil shoots. Serves 4.
